Weekend breakfast idea! We don't suggest being in the habit of eating processed meats but this is one of our go to weekend meals. The ham adds the extra needed protein. When eating breakfast meats or lunch meats it is best to use uncured and nitrite/nitrate free meat.
White wine vinegar (Optional. Rice and balsamic work also).
Salsa or hot sauce.
*Prep all the veggies and prepare eggs in poaching dishes. Start heating water in poacher.
*Sautee garlic and mushrooms in olive oil. Add a splash of cooking wine if available. Pinch of salt n pepper.
*Add egg tray once water is boiling. Keep an eye on eggs for how you like them.
*Grill slices of ham. Prep plates with tomatoes.
*When the mushrooms are done keep heat on and just add spinach on top. Put a cap full of vinegar on top, put on lid, turn off burner and just let spinach steam. Mix up once spinach wilts.
*Eggs should be done.
*Top tomatoes with ham, veggies, avocado pieces, eggs and salsa. Add pinch of sea salt and pepper.
*Enjoy nutrient packed breakfast! Veggies at breakfast!
